Sugandha Sella Rice is a variety of aromatic rice known for its fragrance, flavor, and slender grains. Although it is not classified as Basmati rice, it is still highly valued for its cooking qualities. The word “Sugandha” means “fragrance” in Hindi, highlighting its pleasant scent. The term “Sella” refers to the parboiling process the rice undergoes before milling. During parboiling, the rice is partially cooked in its husk, which helps retain nutrients from the outer layers and gives it a golden or yellowish color. This process also makes the rice firm and separate when cooked, preventing it from becoming sticky. Sugandha Sella Rice typically features long and slender grains, similar to Basmati, with an average length of 6.5 mm to 7.0 mm or even longer. It has a pleasant, nutty, or floral aroma, adding a rich fragrance to dishes. Thanks to the parboiling process, it has a firm texture when cooked, with grains that remain separate and fluffy, making it ideal for dishes like biryani, pulao, and fried rice, where individual grains are desired. Additionally, the parboiling reduces the cooking time to around 15-20 minutes, making it a convenient choice for both home and commercial kitchens.
